Consider this post in the "Things that work" Category. This past summer and fall, I have been using one of these Fat Gecko mounts to shoot some in-car video at our Autocross events. Been mounting this on the inside of the windshield with the camera up-side down. That way, I did not have to use the extension they show in the picture and the Video would have less vibration. Then during the edit in iMovie - I flip the video right side up.

Mount would work well for Sailing Video with your Point and Shoot cameras. Might offer some new ideas as to where you can position the camera.
