Although this won't help already made Sunbrella products, I recently had a boom tent made for one of my smaller boats out of "ShurLast" waterproof but breathable fabric also coming from GlennRaven Mills.

It cost slightly more than the Sunbrella but is considerably lighter and one I seamsealed completely waterproof.
