can you accommodate a self-trimming sink that is that deep, front-to-back

() You'd really need something more like an 19" deep counter (certainly at least 18"). You need some room in the front (forgetting cutting out the cabinet and the faucet installation and servicing.
That's one the reasons that the Scanvik is shallower.
