Squeezing past.

That's one thing that irks me about our side galley Tartan 30 - squeezing past the person working at the galley. I've improved things by about 4" by putting a fold-down edge on the table, but that still doesn't give the cook their space to work. Your solution is interesting - yet I'm not sure we're ready to give up a 1/4 berth. And sometimes the 'squeezing past' leads to other squeezings - often quite pleasant.
