I use Defthane Satin (link)

A rather hard UV inhibited varnish that can also be used on cabin soles. After 23 years I still find it satisfactory, and it goes on easily with a foam brush and resists sagging and dripping. Most of the exterior varnish is things like handrails that get significant abrasion and it is excellent for that. For the interior lots of others would do, but it is also fine for that application and I am familiar with how to apply it. Don't know how it works as a gloss varnish, but my boat gets too much use to worry about that much. :)
