I have an Android App called GPS Essentials that has a lot of cool features including Google Maps integration as well as a portable map for off the network navigation. You can set the tracking interval to "Fastest" or from 1 second up to once an hour depending on how much storage you want to suck up. I like playing with the camera function which has a compass and inclenometer overlay and will show waypoints as a stick pin when they come into view. It also shows you which satellites the GPS is using.
