I took the dorm fridge out of the truck and back to the workshop. I was absolutely sure I could make this work. After digging out about 100 cubic feet of styrofoam insulation I removed the guts. Picture is what the innards of a new dorm fridge looks like (no comments on the workshop environment, it's boat project time).
Unfortunately, trying to wrangle all the copper tubing into a manageable shape resulted in multiple crimps making it unuseable without bringing in a refrigeration technician. It is now back in the garage waiting for the trip to the recyclers.
