Thanks for your suggestion. I haven't really been watching weather data on land via Internet, but I think it would be interesting/fun to find some of the products I used to get via HF radio/Sailmail.
I followed these instructions...

...and got the following reply:

("catalog" is not a valid command or document code).

One note is that you mentioned to put "Send Catalog" as the content of the message. That left me wondering about what to use as a subject line, if any. I put "Send Catalog" in both the subject and in the body of the e-mail (nothing else in the body).
So, next I tried putting "Send Catalog" in the body of the message (i.e. the contents) and nothing in the subject line. I got the same error reply back.
I *then* noticed (it was mentioned in the error message) that I could send a completely blank message (no subject or body) to query@saildocs.com and get instructions. This worked, and there is a lot of information in the reply, so I have to read through it all to learn more -- but on first reading it looks like "Send index" would be the way to get the full info, and for catalogs you have to specify more specifically what you want (from the index), as follows (IF I'm reading this correctly at first glance):

Documents are requested by sending an email to: query@saildocs.com. The subject line can be anything, and the body of the message contains requests of the form "send xxx" where "xxx" is the name of the document. The word "index" has a special meaning and sends the current library index, and a document called "info" (this document) is always available. For example, to request the index and help documents, send the following message:
To: query@saildocs.com
Subject: (anything)
send info
send index
You can follow this with the command command "quit", a line of dashes, or just end the message. Note that extra text at the end, such as an email-footer, may cause Saildocs to not respond. This is an anti-spam measure (and does not apply to messages sent from Sailmail).
Requesting weather bulletins:

Once the index is received, request one or more weather catalogs (for example "send epac" for the available Eastern Pacific bulletins). Then request the bulletin by using the code from the catalog:
send FZPN02.KWBC
