What I did was put snap hinges on the panels and my pin rail on the side stays. When we get to anchor, I grab the panels out of the aft cabin and snap them on the pin rail and prop them up to catch the sun. Worked great in the Sea for quite some time.
It's a bit hard to describe in words. I am currently working on a video that shows my process of "flying the solar panels".

P.S. I no longer use the panels in the photos on the web page. The power output was crappy compared to the newer panels.
