With the advent of chartplotters and electronic navigation, the traditional chart table/nav station has pretty much disappeared. They linger below in most designs by virtue of inertia and traditional reluctance to accept new ways. The below decks nav station has received a temporary shot in the arm by the use of computers in that it had about the only flat surface and a seat on most vessels under 50'. A chair takes up waay too much space on most boats down below and no matter how comfy, it still won't really be a comfy easy chair. Not only does it take up space, but there's a lot of space under the charttable that is useful if you are willing to stand up to the nave station.
In order to stay slightly on topic, I'd offer a suggestion or two for actual chairs but would need to know your primary purpose and location for it.
