if I am zoomed way back, I like North Up. But zoomed in closer (like you must do to see buoy detail on most chart plotters) I like course up. This assumes that the chartplotter is right at the binnacle, so I can look up from the chart to the horizon and back again, they are in the same orientation. Otherwise it's like flying an RC plane coming towards you, or riding a bicycle with your hands crossed - yeah, you can train yourself to do it but it sure ain't natural!
If the chartplotter is below decks, then what the heck, it can be any orientation since it doesn't relate to anything.
A moving map chartplotter loses about 1/2 its utility if it is below decks and cannot be instantly referred to while piloting.
