I'd seal only the edges, I think. Easier to repair the varnish on the flats. BUT...I'd use.......

..an epoxy more compatible with UV. If you look around the net you'll find a few. WEST 207 hardener with their epoxy is less sensitive but there are others. Varnish doesn't last....epoxy should.

Be sure the wood is quite dry before you do any finish work. Remember that plywood surface plies are fairly thin and you can sand through them easily.
