That's sometimes the trickiest part where bad things can happen if you don't do it properly. You want to douse the sail on the lee side behind the main. You'll want to have a person (preferably strong) stationed there holding the sheet and pulling it in quickly the moment the guy is released (whether by tripping the shackle or letting the guy run). You want to be sure the sail doesn't have a chance to get puled outside the blanketing of the main. You'll want to be well off the wind when doing the take down.
For setting the chute, be sure you get it up quickly before it has a chance to fill. Hoisting it in the lee of the genoa (while sailing fairly far off the wind) is usually the way to go.
