We buy ice and keep it in some plastic buckets. The buckets are just the right size for the large ice blocks sold by marinas, and collect the melt-water. Every few days we change out the ice/water and about once a week we clean up with a sponge.

I'd convert it with a cold plate and compressor if we were to go cruising full-time where ice isn't always available
