Check valve will leak water that you won't want to soaking you ice in or aerating you box (and contents) with.
Shower sump, yes
If you can pump the frige drain to the shower drain pan. Then I'd do that, then you can deal with it in due course.
We just put the ice blocks in plastic containers
That works -- or use callon milk jugs and freeze water in them.
There will still be some condensation water even if the ice-melt is contained

Same here. My boat has a large built-in icebox under a cockpit seat
How about....
I have a T below the galley sink drain that I pump the icebox through.
