Dan, I have very mixed feelings about Apple and iPads. It's "easy" and "intuitive" so long as you want to do the limited things the programs intend. File management isn't usually one of those things.
I think of the current crop of tablets as display devices with limited input capabilities. I don't use them as authoring or content creation tools, except short messages, or frustration starts to kick in (as you're experiencing). On-screem keyboards suck (typo intended).
IMHO Windows 8 with a convertible tablet (with flip-out or detachable keyboard and SSD drive) is going to get us a step closer to that ideal world. I've been playing wih the beta version a bit on a tablet computer that's not designed for Win8. Still needs work but the hardware/software I'm using isn't fully baked.
Later this year when it's released I'll buy a new Windows 8 tablet as my primary portable device. The iPad will remain for coffee table and reading, and certain apps.
PS -- iTunes sucks too.
