The issue is the sink position relative to heeled waterline?

While the configuration of the discharge can exacerbate that if you induce pressure (or conversely reduce pressure) as the boat surges along.
THe plug might work, as long as NOTHING ELSE is concected to it. The checkvalve would make the sink a bit balky. CERTAINLY that would speak against connecting the bilge pump into this drain, in my opinion.

Just my opinion.... 
- That's what I do
- I feed the salt water for my "Marine Elagance"
- One More idea to reduce the amount of holes in our boat
- That could get a little wet if you have a robust thru-hull?
- The bildge pump exit is normally above the waterline for reasons including that it gives you an indication of pumping
- And using the sink drain thru-hull, it means leaving that seacock open when you leave the boat.
