Question on exhaust gas temperature

We recently installed a NASA marine exhaust gas temperature monitor and alarm

The thinking is that if water supply fails, the exhaust gas tempeerature will go up faster than the cylider block, so give more warning. (also our volvo 2003T has only an idiot alarm, and no temperature gauge)

To my suprise, the operating exhaust temperature is only 28 C (say 80F)

I had expected mch more, say 75C (about 170F)

The sensor itself checks out OK when stuck in a cup of near boiling water.

Perhaps the injected water is hitting the sensor, althoug is it about 6" down the pipe from the injection point.
Any comments?
Should I move the sensor to downstream of the waterlift so it see mixed gas/water? This would slow its reaction to a water failure quite a bit.
