You need the silver chloride reference anode...

which can be had from various suppliers (West Marine used to have them but maybe not since they turned into Target). This goes on one side of the DVM (and the actual anode dropped in the water), then probe whatever you are protecting with the other. That will tell you galvanic potential. If connected to zinc it should be near the zinc potential. You will see this rise as the zinc is eaten.
