We have an Advanced Elements Convertible inflatable kayak. It takes the better part of 30' to get together and a similar time to break down and bag.
For this reason, it does not get used much. I am considering replacing it with an inflatable SUP that I can set up in five minutes and leave inflated while underway in calm conditions bungeed to the lifelines or pushpit.
They seem to be the latest fad and are priced accordingly which is a downside.
People have been kayaking for a long time. How long will they be doing the SUP thing?
