We had a sad case of an on-demand propane water heater in a head killing a woman sailer from CO

The woman was a very experienced sailor. I believe the accident happened when, it was cold enough to have the boat closed-up.
If you do it, I'd suggest you install good CO sensors in the stateroom and all the cabins.
