Mayo keeps for a long long time without refrigeration.

We bought the smallish containers, always used clean utensils and never double dipped. Did not have any Mayo go bad in the tropics in over two years. One cruiser bought Mayo in the industrial sized jars, to save money, and had no problems.

Canned butter was available in California. Can't remember where we got it but had to order it. Canned butter does not keep forever. We had our last can go rancid after more than 6 months. If you are going to French colony or former colony, take lots of butter and peanut butter. The bread is simply heavenly.

Dehydrated Green Peppers were really great to put in almost everything. Gave a bit of variety to any food from stew to spaghetti sauce.
