A regional specialty near Acapulco. South of the town there are dozens of beach side restaurants all claiming to have the original recipe.
It is a whole fish (commonly snapper), butterflied into 3 sections (left side with skin, right side with skin, and middle with bones). Then it is slathered in a thick, hot chile paste. Finally it is grilled over a mesquite fire. Served with all the fixings for tacos.
Our favorite spot is at the very end of the road next to the lagoon in Barra Vieja. It is called Beto Godoy.
