Cat 5 would be fine... I'd recommend you cut the ends off a "patch cable"

Patch cables use stranded wire, whereas premises wiring (building wire) uses solid conductors. The stranded wire will hold up better to vibration. You won't need shielding but if you want to have the extra piece of mind you can get shielded cat-5 patch cords.

If you want to use tinned wire for maximum reliability, you might consider Ancor Part#153010, AWG20/3 twisted (unshielded) wire. That gives you send, receive and ground.
