As for 12v, you can double up some conductors

Cat-5 gives you 4 twisted pair, but you only need 3 conductors for NMEA signal (send/receive/ground). That leaves you 5 to play with, and you can gang them up.

- Cat 5 would be fine... I'd recommend you cut the ends off a "patch cable"
