CONCH FRITTERS
4 conchs ground
Finely chop > 1 green pepper; 1 red pepper; 2 celery stalks; 1 onion; thyme. Combine conchs with chopped veggies; Add one egg beaten
Mix together > 1 3/4 flour; 3 tsp baking powder; 1/2 tsp salt. To taste > pepper, hot pepper sauce, Old Bay seasoning
Then add dry mix to conch mix. Use a tablespoon to drop into hot oil
Serve with Key Lime Mustard Sauce or a sauce with ketchup, mayo and horseradish.
SAUCE > Mayo, ketchup, hot sauce, mustard, Old Bay Seasoning, lime juice. Can add Tony Chachere Creole seasoning

TRY > Beer for batter (works/tastes great), less corn meal, more flour, Baking Soda, Self Rising flour
BATTER > use a little less than half of corn meal and little more than half flour, 3 t Baking Powder; evaporated milk to thicken. Mix batter first then add chopped stuff
Bahamians add tomato paste to conch mix and water. Coat spoon with hot oil when picking up batter so batter doesn’t stick
