We read these two books at the same time. Prevent and Reverse Heart Disease is along the same principles as Forks Over Knives. We've been trying to implement some of the concept -- basically only plants, no other foods. Prevent and Reverse Heart Disease goes as far as no oils (even olive oil), no dairy, no this, no that. We only do this at home, when we're at holiday celebrations or a restaurant or friends/family homes, we try to eat as many veggies as possible, but we're not fanatics. In David's last cardiologist checkup -- 30 days after implementing 10mg Lipitor and the diet, David's cholesterol went from 212 to 123. The cardiologist was amazed, so we're continuing the experiment. I will say we love veggies so it's not the end of the world for us. The biggest problem is when we add in all the "real food" like even Thanksgiving at our daughter's house, our systems don't tolerate fat very well. I guess that's good, but it's certainly a learning curve. We feel better and have more energy when we're eating veggies, but learning to fix dishes with FLAVOR has been a challenge. We haven't decided if we're continuing this experiment. Check back in a few more months.
