We used vinyl on all the boats

since the old days of the CWBB and the Cove, so however long ago that was. There are different grades, I usually get the standard grade as this is not a harsh environment. As far as viny removal, I have used the hair dryer, vilny scraper method but then one of the club members who does vinyl for a living told me to go to an autobody supply and get a "pinstripe removing wheel". Basically a 3M product, looks like a wheel made out of gum erasor material. Chuck that into a drill motor and it rubs the vinyl and adhesive right off. Note: Follow the reccomened RPM on the wheel you buy so it doesn't get too hot.

Plenty of sources for letters, I use misterletter.com on the web. Have for years now. They are good, and dirt cheap. Like so cheap I have yet to get to the minimum order of $35 including shipping. Usual disclaimers, no affiliation, yadda yadda
