6 coats of epiphanes gloss will give you a nice finish.

I'd go with 1.b
Bear in mind that Ash, when exposed to moisture, will turn black
I do #3. # 2 would be good too, especially for a boat hook.

Paint is just paint, but I still use it a lot.

Concur: Rule of thumb, one coat of paint lasts three years, three coats of varnish lasts one year..if you're lucky.
No finish at all is best for a good grip.

I would suggest the you use two coats of clear epoxy then varnish on top
