Removing the cabinet facade and try the veeberth without the filler? If the bunks are too small, it won't work. But being able to walk into the vee, sit and get in that way could be easier for your wife(it is for me). Easy to put a step in as well.

Your idea could work well. It would depend on if the step was where it should be. If it isn't out beyond the filler, it won't be too handy.
A strategic handhold placed for your wife could help too. Nice boat your PS, and that filler door is a brilliant idea for added space. But you could stow it while the veeberth is in use.
