Quinoa is one of the most complete vegetable proteins available but is not very nice on its own. Curry does a great job of making it palatable. Chili is another easy meal that can be made vegan, just look for fake ground "meat" or Textured Vegetable Protein (TVP) in the veggie section of your supermarket and substitute it for regular ground meat. I have vegetarian and vegan family and I often make a pot of regular (with meat) and a pot of veggie chili.
