black beans come in a can. Broccoli comes in a big bag, mushrooms come in a big box... any and all of this can be wrapped in a tortilla (or if he can't take flour, lay it in a corn tortilla as a taco)
All the above have a long shelf life and don't even require refrigeration. The fresh foods will go first.
If you have refrigeration, make a big batch of this chili http://pickyeaterblog.com/the-best-vegetarian-chili-ever/ and serve it with corn bread or wrapped in corn tortillas... can he eat eggs, serve it with eggs on the side. (yeah, I know all you Texans out there are about to argue that Chili doesn't contain beans... but this is veggie chili... so back off)

If you don't have a fridge, again beans and rice always work. And for a nice treat, grill a large portabella mushroom and put it between two buns... makes a great "burger."
And of course as others have stated... talk to him, find out what he eats now... for all you know he lives on mushrooms, nuts and greens.
