My SA/D is 30.9 upwind, 73.6 downwind with spinnaker. As a multihull the hulls are narrow and we don't heel more than about 5-10 degrees, but we don't sip cocktails when others are double reefed either
When the wind is really cranking we double reef also, and chop often dictates we slow things down as much as we can for crew comfort and to avoid breaking things. Our first reef is at 22k apparent, second reef in the high 20's and we can carry that up to about 45 k apparent. Above that I full furl the genny with double reefed main, and above 50 apparent I drop all sails; I don't have enough reef points nor have storm sails, and just want to make port under power and be safe.
The other side of that is light air. In under 10 knots apparent we do "hull speed" with main and genoa. That lets us sail when some others might motor.
