If you're playing with the hose, you have to be sitting there constantly; and, you can have a pretty wet engine room.
The other difference, as you pointed-out, is that without the 5 gal bucket, you'll likely starve the pump which (at best) hurts the impeller, if not destroys it. You really don't want to be chasing bits of your impeller through your heat exchanger.
