I have found on my boats.....two errors in backing consistently made.

One is to throw the helm hard over for any reason. Just brakes the whole thing in my experience. The other is to use too much throttle. It takes a delicate balance of gaining way in backing and over coming cross winds or currents.

Boats on either side will, of course, cause panic, at least for me.

The only time I'd give full throttle or full helm is when using the prop wash to suck a stern into the dock in parallel parking.
