Yeah I find turning while going forward to work very well

I too can turn in my own length. I can make a tight donut that shows me almost spinning in place. But in reverse, the rudder seems to do very little. Full keel with a cutaway forefoot seems to "blanket" any rudder movement while in reverse. I have considered trying just a dinghy oar off the bow to see what that might do in reverse. Just wedge it between the hull and the bow sprit to get leverage and then angle it one way or another for effect. A forward rudder if you will.
