If you had fiddles that were, maybe, four inches

high you might be able to keep things in place in rough weather. Fiddles in a galley are usually around one inch to keep things in place at anchor in a roll. To increase the size beyond about one inch just makes working in the galley harder. In any kind of a crossing during rough weather you need to depend on other methods to hold things in place. IMHO I have a removable fiddle in my pilot house which might be an option for you.
