If you are doing Corian, you might consider this method...

it was done at Bruckmann on my boat and I am extremely happy with the result (and I am very difficult to make extremely happy!). I don't have a great picture to illustrate, but what was done was to laminate a cove of Corian at the edge all around, then glue the fiddle above. This makes a rounded corner rather than square at the edge, and keeps the wood off the wet surface as it stands about 1/4 inch above the flat. Cleaning is VASTLY simplified and improved as a result. They also rounded all the outside corners, further improving cleaning. There are no sharp inside corners to try to wipe the crumbs, mildew, and yuck out of. The backsplash area is coved as well.

In addition, I found a Corian substitute double sink small enough to use in the boat (the actual material in my countertops is a Samsung product). This can be glued underneath the counter for a seamless, rimless edge. Again making cleaning very easy. "There is no where for the dirt to hide". Sinks as supplied for the home construction industry are too large for a boat, these came from Gemstone and are intended for the RV industry. I used small vanity bowls from them for the heads as well.

You can kind of see the detail in this photo. Notice the cove at the corner and along in front of the sink. You can have quite a puddle on the countertop and never get the fiddle wet, one sweep with a sponge and everything goes down the drain:
