Reading these, I'd still get rid of one of the sinks.

Unless your experience has been you do a boatload of dishes and need the sink capacity. What you give up is precious counter workspace, not only from the two sinks, but from the third block in the corner, rendered useless by the kiddy-corner valve. Two sinks would be nice for sure, but I'd want more counter space, first.

I'm a cook so I would want to reclaim two of the three squares of space for workspace. I also use my galley space as a work bench. It's the best working area on my smaller boat. I keep a piece of plywood that fits a small area so I have a substantial durable surface to abuse rebuilding a pump or whatever.

Another thing I wonder, that 8" valve takes up a lot of space. You can get 4" O.C. bar sink valves with high necks. Your present kitchen 8" valve is stretched to either sink. You might be able to tuck a 4" closer for better use and take up less counter space. Alot depends on which sink you prefer, what's going on below each, and what you would do with the reclaimed volume below and new counter space on top.
