Both Mountain House and Backpacker's Pantry freeze dried meals are okay for what they are. During boating season I keep a couple of packages on board (along with a backpacking stove) for emergencies. But I avoid eating them except as a last resort. (That may be because I've just eaten too much trail food over the years.) If you're thinking of going that route, buy an assortment of meals and try them at home.
Freeze dried meals like MH and BP are expensive (but not, I suppose, in terms of boat dollars). A cheaper alternative that many backpackers use are Lipton Sides. Or if you're willing to put in the time and want better meals, Google "freezer bag cooking" for techniques and recipes.
