My experience.

I added one to my Tartan 30, which loves to sail on an anchor. Mine is home made, and just a single panel. Snap to the end of the boom, a jib shackle slides up the backstay and is tensioned by the main halyard. Tack line leads forward to a cleat on the mast. Works like a champ! In a breeze, there is a definite 'whump' as it changes tack but we've learned to live with it. A double panel rig would seem to eliminate the 'whump' but be harder to rig.
A single panel is easy - try it. If you don't like the 'whump', then go for the double panel.
