My TZ-4 has a zoom lens (with image stabilization). Don't know if the wide angle would be wide enough for your desires. I'm not a big fan of fish eye lenses - even back shooting film, my widest lens was a 28mm. At the other end of the zoom, I can tell you that the full tele zoom on my TZ-4 is a lot for a moving boat - even with the image stabilization. Getting a good full zoom shot needs some luck. I don't know if those DSLRs you're considering have image stabilization.
The point & shoot cameras have some pretty impressive abilities. I bought my DSLR mainly to add attachments (ie: bellows) to do macros and to have off-camera flash. I choose not to risk the DSLR on the boat. You're free to choose otherwise.
