Larry, good thoughts. I've specified a porta-potti under the port fwd berth. It's mostly just my wife and I. We'll give the stbd hull to guests whenever that happens. (it was a lot less than we'd have liked when we had the 41). We prefer to be away from the galley side and the occ'l hum of the fridge and galley / food smells, etc. We really liked having the separate owner's hull.
The coffee issue early in the morning is one I've run into a bit though. We're early risers, guests 'on vacation' aren't. That's another reason for using the port hull when we have guests. The porta-potti will deal with those nocturnal visits whilst the guests sleep.
While we loved having guests, it was surprisingly difficult to coordinate a cruise with them, even without the following rule. When we were cruising and living aboard, we our quasi-serious rule was-- "Guests could choose where they wanted to join us or when they wanted to join us but not where AND when". Now that we're land based that might not be quite so strictly enforced.
Overall, my plan is to keep things simple, light and maintain performance to the degree possible. We will do lots of daysailing, frequent spur of the moment overnights (like from 3pm to 10 am the following day) the odd distance, round-the-something-or-other race and a few week long or more summer cruises into BC.
