That's basically what you're doing. No problem. Take a few extra gallons of drinking water and you should be fine. Make sure you have enough bedding to make you really comfortable. You can put up with almost anything during the day but you want to sleep well,,, And ,,, coffee and breakfast food. One of the best parts of cruising is waking up at sunrise and just watching the sun come up in the cockpit with coffee and something to eat in your hand.
Do your best to only anchor. If your going to use marinas you might as well take the car and get a room.
Do you really need to use the holding tank all the time? We have a really big 50' cruiser and as yucky as it sounds there are times when we don't flush at anchor but wait till we're under way and offshore. Just put a bit of deodorant in the bowl and let it sit till your out there. Then dump.
