But I could see it working for an overnight, for just two. The interior measures; 17"L x 14.7"H x 10.6"W which should be pretty easy to cool compared to a marine refer.

For a family of three or four for even a few days takes quite a bit of space for us. I estimate we easily require 4 to 5 cubic feet of cold storage space, bare minimum, to give us just a week(not really in actual experience) on our boat, and that doesn't include ice(50 pounds usually). I guess our ice box is at least 6 cu ft. I would guess we use as much cubic space again in dry goods with produce and fruit filling both spaces, ice box when room permits.

After many years of coastal cruising, I think a boat for our use has to carry a weeks worth of food, water, fuel and cooking energy at the minimum. But we like fresh food unprocessed food and that takes up space.

The food we would carry for a week when the kids were teenagers would fill the better part of my Ford Ranger short bed pick up. I experienced this many, many times.
