Thanks Brian, this is very helpful and was what I expected. Additionally, you have given me some information that I clearly didn't know---thus consulting this board. I had decided that it was time to call in the pros, not that I was intimidated by the electrical issues, but the unique nature of refrigeration itself. Also, the water cooling works so well, that I simply can't see a hurry to get the fan up and running just now. The other day I ran it to see how the water cooling worked, and was shocked that after about three hours the holding plate was just before frosting. Also, the condenser was warm, not the "hot" one I experienced with the Air only method. So for now, I will rely on it. Thanks again.
