For p&s I bought a Olympus Tough TG-1 last fall, as a holiday present to myself. It won't match an SLR for image quality but it's an easy carry, impervious to splashes, and it takes pretty nice stills and full HD vids.

Weather underground (my go-to for weather radar)
BuoyData (my go-to for tides and currents)
Dragqueen (anchor watch program, also popular in P-town )
Yelp (my go-to for "where should we go to eat near here?)
Spyglass (hand bearing compass on steroids)
Lightning finder (paid app shows you where the lightning is)
Skipper (navigation app that uses NOAA RASTER charts, much more detail than vector, and displays better on the phone's smaller screen)
Charts & Tides (nav app that uses NOAA vector charts, $20, and displays ActiveCaptain data too)
