Your IP sounds like a stodgy sailer; you're used to better performance(you've been very diplomatic 
).
A long keel shouldn't keep it from tacking easily without the need of backing the jib. And the fact it can go into irons if the rudder is turned quickly, sounds like it's underpowered(too little SA/D).
