The underbody on your Norhavn is very similar to the hull form of my vintage powerboat. Your biggest risk will be running over a float and having the prop kick it though the aperture between the prop and the rudder. In that case it won't wrap the shaft. If it happens you will know because you will hear a bang when the prop hits the float. If that happens use a long boat hook to snag the line from the cockpit and pull it up. Cut the line and tie it off. In a couple of minutes the float will come up, you can snag it and tie the line back together. Annoying, but not a big deal.
The only time I find the lobster gear annoying is when the traps are toggled and wind/current is orienting the toggle and primary floats across my course. In that case it is best to pass with the primary float up current/wind of your boat so you won't get carried into the gear by wind/current.
There was a mini Nordhavn rendezvous here in Southwest Harbor last summer. The 5 boats didn't seems to be having any trouble.
You will be fine.
