I've known many ketch owners. Almost none actually put their mizzen sails up except as anchoring stablizers. Offshore, they would tend to use the sails on longer passages.

As for stepping and unstepping...most travel lift operators would take exception to the notion that there's any advantages when you haul the boat. As for removing the stays and other rigging -- it's only an additional interference and added expense.
